We initially had a post with stars being the responses, which was then changed to a multiple choice question. Following the conversion we have lost all the data from past survey and the column for responses of answers with stars has empty string in them. How can I retrieve that data?

Unfortunately, at this point, it's not possible to retrieve the answers from a past survey.
In the future, I advise you to duplicate your form and make any editions on the copy of the original one. This way, you won't lose any important data that you've collected.
