If someone responds to my videoask with the text option, then my assumption is that is their preferred method of communicating. I only see the option to respond to them via video or audio. Is responding via text not an option?

At the moment it’s only possible for the creator of the videoask to reply via video or audio. Text reply is currently on our feature request board so I will go ahead and add a +1 to it.
We often find that respondents that start out responding via text switch to video and audio down the line as they get comfortable with the conversation but let us know if you have any other feedback about this.
You can also use the overlay text feature on video if you think it would be helpful to have a text message included in your replies.
