I have paid the package and am using the professional package. However, I do not see Ranking as an option in the question settings, neither Matrix. Please advise.

Assume by your other comment that you are on the classic builder? If you don’t have access to the New Builder via your Workspace my recommendation is getting in touch with support to see if they can make the ‘change’ for you. See how to get in touch with them here.
