My question is, is there a way for everyone to book one mentor so the schedule can't be booked again?

When you mention “booking” I imagine you are referring to the Calendly integration is that right?
Calendly manages your availability, and as soon as a slot as been booked it would become unavailable for others to book. If two people are doing at the same time, the first person to confirm the booking will get priority and when the second person books they should see an error.
