in preview mode on the PC the dropdown choices work fine but previewing the same on the iPhone 8 plus, I am unable to activate the dropdowns no matter where I touch on the screen.
Anyone have helpful hints?

I had a similar issue in the past, but when I restart my iPhone it just started to worked normal again.
It looks like you are having issues with the preview function, but the issue persists in the published version too? If you don’t want to publish your form yet, you could run a test creating a new form with one dropdown question, publish it and see if the issue persists even in the published form.
Sometimes I see something funny (not funny haha, but funny weird...) in the preview mode, but the published form works well. I hope it helps!
